Onion, beans, corn, zucchini, kale, green salsa, seasonings.

Groceries Needed

  • Tortilla of choice
  • Monterey cheese
  • Avocado
  • Cilantro
  • Salsa

Optional Additions

  • Garlic (for stronger flavor)
  • Salt and pepper, to taste

Preparation & Serving Instructions

Cook times are for frozen meals. Times may vary by slow cooker/pressure cooker. Ensure all food reaches 165°F (74°C) before serving. If cooking a thawed meal, use the shorter cooking time listed as a guideline.

Cook: Follow the cooking instructions below.

Serve: To assemble enchiladas: Scoop cooked filling onto tortilla of choice. Roll tortilla and place in a 9x13 pan. Top with any remaining sauce and cheese and bake at 350°F for 10-15 minutes, or until tortillas are crisp and cheese melts. Serve with additional cheese, avocado, cilantro, and salsa.

Low Carb Serving Option:

Use your favorite low carb tortillas or wraps or serve over riced cauliflower.

Small

Meals feed 2-3

Stovetop

Cook from frozen in a medium saucepan over medium heat. Break up as it thaws and cooks. Bring to a boil. Reduce heat to low, cover and cook for 25-30 minutes.

Pressure Cooker

Cook on manual for 5 minutes, use sauté setting if vegetables need to be cooked longer. May add 1/4 cup liquid before cooking to bring up to pressure.

Slow Cooker

Using a 1.5-2 quart slow cooker, cook on low 2-3 hours, or until zucchini is tender.

Seasoning

For stronger flavors, add 30-60 minutes before serving:

Garlic | ½ tsp (or ⅛ tsp garlic powder)

Salt and pepper, to taste

Slow Cooker

Cook on low 2-3 hours, or until zucchini is tender.

Pressure Cooker

Cook on manual for 5 minutes. Quick pressure release. May add ¼ cup liquid before cooking to bring to pressure.
